Porcupine Meatballs

Porcupine Meatballs

2 pounds lean ground beef
1 cup uncooked white rice
4 tablespoons all-purpose flour
1 small white onion, chopped fine
2 teaspoons salt
1 teaspoon fresh ground pepper
2 can tomato sauce

Place ground beef into large mixing bowl. Add chopped onion, rice, flour, salt, and pepper. Using your hands, gently mix ingredients together. Form meat mixture into walnut-size balls and place the meatballs in a pressure cooker. Add tomato soup and water. Seal with lid and cook on low pressure for 25 minutes.

Allow the pressure to drop on it's own and then remove meatballs to a plate to enjoy. Cole and I especially enjoy these meatballs over mashed potatoes!
