Chipotle Style Rice

Tacos (with corn tortillas) or burrito bowls are excellent options for gluten free meals. Adding this rice, prepared like they do at Chipotle restaurant makes them even better!
2/3 c. basmati rice
2 t. (or more!) cilantro
2 T. lime juice
Place rice in a rice cooker with lime juice and water according to your rice cooker's directions. Cook rice, adding cilantro shortly before all of the water is cooked off.
