Gluten Free Sugar Cookies

Yum! These are a bit more "cakey" than regular cookies, but oh so delicious!
  • 1/2 c. unsweetened applesauce
  • 1 c. turbinado
  • 2 t. vanilla extract
  • 1/2 c. coconut oil
  • 1/4 t. salt
  • 1/2 t. baking soda
  • 1/2 t. cream of tartar
  • 1.5 c. brown rice flour
  • 1 c. tapioca flour
Preheat the oven to 350 degrees. Mix applesauce, turbinado, milk, coconut oil, and salt. Then add remaining ingredients and mix well. Roll into small balls and place on a baking sheet and flatten them slightly. Bake 12 minutes until they are firm and dark around the edges.
