Rice Flatbread


SUPER yummy! It's very good with some hummus on top.
Preheat oven to 200 degrees and then turn off.
1 t. dry yeast
1 t. sugar
1/4 lukewarm water
Whisk together these three ingredients and set aside for five minutes.
1.25 c. rice flour
.75 c. tapioca flour
2 T. sugar
1/2 t. salt
Mix together in mixer (I use the kitchenaid).
2 eggs, beaten
1/2 c. milk alternative
2 T. olive oil
1 t. vinegar
Mix all wet ingredients together.
To egg mixture, add yeast mixture. Mix well and then add to dry ingredients. Beat in mixer about 3 minutes. Spread onto a baking sheet with parchment paper or oil on it and allow to rise 40 minutes in preheated oven.
Remove from oven and preheat to 425. Bake for eleven minutes.
Spread with your choice of toppings and enjoy!
