Tomato Basil Soup


I make up big batches of this soup, store in ball jars, and then drink at work in the style of Campbell's Soup at Hand. It's full of yummy flavor and nutrition!
3 T. butter
1/4 c. chopped green onions
1/4 c. chopped celery (or more, if you like)
1 c. chicken broth
1/4 c. cold water
1 T. cornstarch
2 cans diced tomatoes
1 T. dried basil
In a large dutch oven or sauce pan, melt butter. Add green onions and celery and cook until tender. Add broth and bring to a boil for one minute. In a small bowl mix water and corn starch and then mix into broth. Boil one minute. Stir in tomatoes and basil, return to boil, and simmer for 5 minutes. Ladle into ball jars, cool, and refrigerate until needed.
