I think this salad is amazing, though Cole is not as thrilled with it. He does not like the flavor of apple cider vinegar very much, so recipes in which it is able to be tasted are just not his favorites. However, I think it makes a tasty protein topping for a green salad!
2 boneless skinless chicken breasts, cooked and shredded or chopped into small pieces
1/4 c. olive oil
1/4 c. apple cider vinegar
1/2 c. finely chopped green peppers
3 T. onions, finely chopped -or- 1 T. onion powder
salt and pepper to taste
Place all ingredients in a bowl and mix together. Allow to chill and then enjoy over a bed of crisp cool greens!
