Gluten Free Fudgy Brownies

1/2 c. coconut oil
1/2 c. cocoa
1 c. white sugar
2 eggs, beaten well
3/4 c. rice flour
1 t. vanilla
2 t. baking powder
1/4 t. sea salt
Melt coconut oil in a pan. Add in cocoa and sugar; remove from heat. Mix in the rest of the ingredients, pour into an 8x8 baking dish, and bake at 350 for 20 minutes.
These brownies are so yummy! They taste just like glutinous store-bought mix brownies - this fact has been confirmed by two non-gluten free family members!
