Butternut Squash Soup

This is a super yummy, slightly sweet soup. I think it's absolutely delicious!
(butternut squash - just waiting to get made into soup!)
1 medium butternut squash, peeled and cubed
1 small onion, chopped
1 small green apple, peeled and chopped
2 medium red potatoes, peeled and chopped
3 c. chicken broth
1 T. oil
salt and pepper to taste
Heat oil in the bottom of a dutch oven or heavy pot. Add the onion and saute until softened. Add the broth and bring to a boil. Add the veggies and simmer until soft and tender. Place in the blender and blend to a smooth consistency. Add salt and pepper to taste.
This soup is easy to put into pint mason jars and take to work in a style similar to Campbell's "Soup at Hand."


  1. This looks amazing! How long does it take to cook?

  2. You just cook it until everything is tender, which will depend on how small you chop the veggies. It usually takes me about 20-30 minutes to get everything cooked well enough to blend well - but then it is sooo good!
